What to watch when scaling baking recipes

Leavening agents: Do not scale completely proportionally for very large batches. For batches larger than 3x original, reduce baking powder by about 25%.

Eggs: You cannot use half an egg. The calculator shows exact maths. Use nearest practical amount.

Salt and spices: Taste as you go. Strong flavours often need less than exact scaling suggests.

Baking time: Do not scale cooking time. A doubled recipe needs more time. Check with a skewer.

Pan size: A doubled recipe needs roughly twice the pan area.

Tips for scaling down

  1. Use a kitchen scale for small quantities. 1/4 teaspoon of baking powder is difficult to measure accurately by volume.
  2. For egg-based recipes, beat a whole egg and measure out the proportion needed by weight.
  3. Cooking time will be shorter. Check regularly rather than relying on original timing.

Can I scale any recipe? Most recipes scale well. Some complex pastry, candy and bread recipes are sensitive to exact ratios and may require testing rather than simple scaling.

Does cooking time change when I scale a recipe? Time depends on thickness not total quantity. Doubled cookies on two trays take the same time. A doubled cake in a bigger tin takes longer.
